Yesterday was a quiet day at work, so my boss told us to leave a little early. Since my commute is about an hour (sometimes more), I am always happy to be home before 7:00! I wanted to cook on the grill again since it was so nice out and I had taken chicken out of the freezer the night before.
When I got home, I mixed up the following:
- Hoisin sauce
- Rice vinegar
- Olive Oil
- Chopped garlic
I honestly didn’t measure it, I just looked at it and made sure it was enough to marinate two peices of chicken.
To my disapointment, the grill would not light! I guess the tank is empty and I will have to get on Joe to replace it. 😉 I had to bake it instead, booo!
After baking in the oven for 20 minutes on 375 degrees (flipping half way through), I placed the chicken on top of some broccoli slaw that I mixed with rice vinegar, chia seeds, pepper, and olive oil.
I saved the other piece for lunch this week. It would have tasted much much better on the grill..next time!
Dessert was a hodge podge. I placed 2 broken up vanilla pizzelles in a bowl. I cut up some strawberries and through some frozen bananas in there, too. Then I added some almond milk, a scoop of Hershey’s dark cocoa powder, stevia to sweeten, a dollop of cool whip, and sprinkles, of course! Last minute I added some gooey Crazy Richard’s natural peanut butter.
Yuuummmm! I have a feeling a smoothie bowl is in place for dinner tonight!
Since Joe and I eat Pizza every single Sunday (our cheat day), I decided I wanted to make it this week instead of ordering out. So, last night, we enjoyed two pie’s of somewhat healthy Pizza.
First up was making the sauce. I sauteed about 2 tbsp. of garlic in 1 tbsp. olive oil for a few minutes. I then added a large can of whole peeled tomatoes in sauce. Before I added them I squished them up in my hands so the tomato was broken up. I added spices such as pepper, red pepper flakes, garlic powder, onion powder, truffle salt, oregano, and fresh basil. I also added a little bit of parmesean cheese to thicken it up. I let it simmer for a while, or until Joe got home. 🙂
As soon as Joe got home I turned on the grill and started prepping the pie’s. The first one was just basic with sauce and mutz (I used Polly-O part skim)!
I popped it on the top rack of the grill to bake for a while, and then moved it to the bottom rack so the crust got crispy. Oh, by the way I used store bought whole wheat crust! Much easier than making my own, but someday I will. 🙂
We topped it with parmesean cheese and fresh basil and DUG IN!
For the second pie, I decided to do something a little different. I sauteed some mushrooms in olive oil and added asiago cheese to the mix. Good choice, if I do say so myself.
We washed it all down with a bottle of Ken Wright Cellars Pinot Noir.
This was the first time we used the grill this year. I love grilling on beautiful days like yesterday! I can’t wait to use it more often. It’s so easy and you can grill just about anything.
Now, I’m off to eat leftover pizza with some roasted brussel sprouts I cooked up last night. Have a happy Monday!
Work was a whirlwind today. I ended up having a meeting that I wasn’t expecting. Lunch was served, which was nice. I brought my lunch and usual snacks, but ended eating none of them! I hate bringing food back home from work. The rest of the day flew by and I totally forgot about the greek yogurt I brought. Luckily, there was a Pinkberry party for one of our employees to substitute.

On my way home, I stopped at the grocery store for a few basics since my Mom is coming to stay for the weekend. I was starving by the time I got home, but first, I cut up some bananas for future smoothies. Frozen bananas are the best ice cubes.
Then, it was time for some din din. I basically made what I had brought for lunch so it wasn’t wasted. I had a Boca veggie burger on a sandwich thin with muenster cheese and a pinch of ketchup (not really needed but it’s a habit with anything burger-like). On the side I ate some veggies and hummus.
I’ll probably make some kind of dessert with these guys. Remember I bought the vanilla ones that my mom told me about? They have Chocolate??? I’M IN!
