Bridal Shower Recap

I have been M.I.A. all weekend, clearly, so I figured I’d recap my friend’s bridal shower. I was gone Friday night through Sunday and unfortunately still haven’t caught up on my sleep due to my boss asking me to come in an hour early to work this morning.

The shower turned out beautiful and we were happy that Carrie enjoyed all of the work we put into it. We each brought a dish and ended up with a great menu consisting of chicken salad with grapes & pecans, asparagus and green beans with lemon basil dip, salad with blackberries, ham biscuits, fruit salad, caprese skewers, and a whole slew of appetizers that I unfortunately forgot to snap a picture of. We had cheese, veggies, crackers, hummus, shrimp cocktail, etc.

Drinks included wine and the lemon basil mojito that I made. I think the picture below is mainly pellegrino being that we all had a few drinks before lunch and switched to water for a bit!

The bride opened her gifts from Pottery Barn & Williams -Sonoma. We also got her a gift from the bridesmaids that included a wine tour on their honeymoon which is an African safari! So cool, right? The theme of the shower was safari chic, so we all wore printed dresses. We also did a “wishing well” where guests brought a bar item to complete the bar in their apartment.

I wish I got a picture of the full spread, there were so many gifts! Her soon to be mother-in-law is a photographer so when she posts all of her photos I will have to give an update! We also made Carrie a bow hat and got her a sash, which she clearly loved.

Me and the Bride to be, Carrie!
We then enjoyed a great spread of desserts including chocolate covered strawberries, lemon tarts, and cake. The cake was an orange flavor and I thought I wasn’t going to like it. I am not one for creamsicle and I normally enjoy chocolate cake, but this was to die for!

We then headed to the backyard to have some fun on the zipliner!

Bridesmaids – Jamie, Ashley, Kathy (Matron of Honor), Carrie (Bride!), Stacey (Maid of Honor), Kristina, and Me

All guests left with a favor – little bags of chocolate covered pretzels with a cute note.

After the shower, we cleaned up, took a nap, and had leftover food and drinks before heading out. We ended up going to a deck bar with a fun band. We obviously made sure that the bride was pulled up on stage!

We got home after 1 AM and polished off the rest of the cake and leftovers.

We woke up early and hit the road after a quick breakfast that included fresh fruit, coffee, and cinnamon toast crunch bagels from Panera Bread (yum!). It was about 2 hours away, so by the time I got home I was starving and met Joe for our usual Sunday pizza. I had a great weekend overall, but just didn’t get enough sleep! Oh well, you’ll have that sometimes! 🙂 I woke up at 4:30 this morning to get in a quick run before having to come into work super early, as mentioned above. Speaking of, I have to get back to that!

Enjoy Monday!

Strawberry Shortcake Smoothie

I was on a mission after work to find buttons for my trench coat. I have had the coat for years and I love it but all of the buttons are loose or have already fallen off. I decided to goto M&J Trimmings in midtown and pick out some new tortoise shell buttons to go with my trench. I dropped it off at the tailors on my way home and cannot wait to pick it back up on Friday! It is going to be a rainy week here so it stinks that I won’t have it.

Anyway, I was craving a smoothie for dinner tonight since I had a big lunch. I got the idea to make a strawberry shortcake smoothie.

Strawberry Shortcake Smoothie

I blended it up and topped it with a dollop of cool whip, a sliced strawberry, chia seeds, and flax meal. Of course I added a leftover chocolate covered strawberry from this weekend, just because!

The wheat germ and cinnamon gave it a dough-ey taste, but next time I think I’ll try it with oats. I needed some nut butter in my life so I also had some spoonfuls of this:

I stopped at Target after work on Friday and while I was browsing the food aisles I came across their Archer Farms brand almond butter for only $3.99! That’s so cheap for almond butter and it’s all natural. The only ingredient is roasted almonds.

I have a foot doctor appointment before work to get my orthotics refurbished. I’m pretty sure they’re on their last limb.

I don’t even think I can count the amount of miles I ran on these things in the past year considering I run almost 20 a week. I have just been to lazy to take them– and it’s free too! I hope it doesn’t take too long so I don’t have to run without them that long. I have them because of the way my feet hit the ground near my toes (like the ball of my foot sort of). The tendons get inflamed and I had to have cortisone shots a few times before getting these orthotics. They are lifesavers!

I have a phone date with one of my best friend’s Claire now. She moved out to California (hense the late date –9:30pm) two years ago and I miss her so much! We graduated from the Fashion Institute of Technology together (see below). She is coming to visit in two weeks so I’m sure you’ll be reading about it on here.

Fall 09 after Margarita's and Mexican, our fave!

Goodnight! 🙂

The Post With Many Names

The name for this post changed about 5 times since I woke up this morning.

  • OIAJ
  • Squats Til You Puke
  • Jello Legs
  • Not the Mama
  • Pain is Weakness Leaving the Body

I’ll explain why. It all started last night when I got home from work to see an empty jar of peanut butter in the recycle bin. Joe finished it on me! I was a little angry, for a second, but then a lightbulb popped up above my head. OIAJ!

My first Oats in a Jar! There were scraps of PB left on the sides, perfect for making my overnight oats. I added:

  • 1/2 cup old fashioned oats
  • 1/4 cup unsweetened almond milk
  • 1/2 scoop Isopure vanilla protein powder
  • 1 tbsp chia seeds
  • 1 stevia packet
  • sprinkle cinnamon
  • 1 tbsp homemade almond butter
  • mashed up banana
  • 1 tbsp Hershey’s dark cocoa powder
  • 1 tbsp chocolate PB2

Yea, I went a little crazy. I mushed it all up and dreamed about it all night. I even thought about it at the gym this morning. I did a short 20 minute floor ab routine followed by 35 minutes on the treadmill, covering just under 4 miles (warmup and cooldown were incline walking). At that time, my post was named OIAJ. I was sure of it because I knew how good they’d be.

Next, I saw a dude with a shirt that read “Pain is weakness leaving the body.” I thought, wow, this is a Julie exercise mantra quote. I intend to tell her to add it to her list. This quote makes you want to push yourself hard at the gym, but also implies than when you are sick, your body is saying “Hey, hold up! Rest and let me get rid of this annoying illness so you can resume normal routine!”. The name of my post (in my head) changed immediately. Nope, too long of a name…plus, we had some more thoughts going on this morning.

I headed over to do squats for the first time in 3 weeks. Since I took last week off, and was lazy the week before and just did the basic machines, it had been a while. When I was done doing 6 sets of squats and deadlifts (15 reps, 10 second rest), I felt like I was going to puke. That’s when you know you have a good leg workout! That is also when you say “I am going to name my post ‘Squats til you Puke'”.  About 10 minutes later, after finishing up the rest of my leg workout, stumbling up the stairs and out the door, the name changes to “Jello Legs”. I feared I would not make it to my car because my legs were so weak.

When I got to work, I enjoyed these little buggers. I had to add a little almond milk first to soften them up. I enjoy scraping the sides like Kath. I wouldn’t compare it to vacuuming. I don’t know what I would compare it to, but it is very enjoyable getting every last bit of oats!

Every bit of YUM I expected.

TGIF, my friends! I was thinking about TGIF this morning and rememberd the shows on ABC every Friday night from 8-10pm (am I wrong on the time?) The show with the dinosaurs used to be my favorite. I brought it up at work and everyone went nuts. A girl on the other side of my cube yelled “NOT THE MAMA”. Remember the baby used to hit things and scream that? I googled it and found that the show was infact called, simply, “Dinosaurs”. This leads to the last contemplated post name of “Not the Mama”, which didn’t make the cut either. Being the indecisive person that I am, I chose the name above.

…and Happy Friday the 13th!! I am not supersticious, but I did have a mishap with my commute this morning that really angered me.

Lunch that I am enjoying as I post:

Leftover sauce from Sunday’s grilled pizza with Carba Nada noodles and parm cheese.

Do you feel like weird/bad things happen to you on Friday the 13th? Do you remember or did you watch Dinosaurs? What usually determines your blog post name?

Back on Track

I honestly didn’t think one week off would affect me as much as it did. If you read my previous posts about being sick, I discussed how I felt it was a good idea to take an extra few days off after my sinus infection started to clear up. I was not at the gym for a total of 9 days (a Saturday through the following Sunday).

Monday and Tuesday of this week, I jumped right into my usual 30 minute ab routine followed by 45 minutes to an hour of cardio. My cardio consisted of interval running and incline walking both days. My abs are unbelievably sore and it was actually difficult to get the amount of reps I was getting the week before. Today, I did one of my usual upper body workouts. It felt a little easier than abs, but it was still hard. My arms felt fatigued immediately after the gym. I can tell I am going to be one sore human being by the end of the week.

I thought about it, though, and I miss the burn! I have been working out 6 days a week with no FULL WEEK break for a long time. All of my weight lifting routines seemed to get easier and I had to increase the weights. I like feeling that burn again like you haven’t used the muscles in years. Crazy enough, it has only been 9 days and I feel that. I guess it’s a love/hate thing.

Another thing I am noticing, now that lent is over, is how much peanut butter I really eat! Giving it up didn’t seem that hard, but right now I am loving it more than ever. I recently switched from Skippy all natural to Crazy Richard’s. Joe and I go through a jar a week because it is so runny (all of the natural oils, I guess). I feel like I am overdoing it with the healthy fats here because I tend to go way over the 2 tablespoons serving size. Ooops! I plan on buying Marantha almond butter this weekend to change things up.

Speaking of almond butter; when I got home today I was pleasantly surprised to see that my mini food processor had arrived from Amazon.

Yeaahh check out those stats. No, it really is a strong little 3 cup processor though. I made some almond butter to test out its skills.

Perfectly creamy. I am super happy with it.

I was starving since I wasn’t in the mood for the last snack I had brought to work (EAS protein shake). Joe’s parents left for Florida last night and his Dad told me to use up the fresh tomatoes they had. His parents actually live upstairs. Our house is split between the top floor and bottom floor (two separate one floor houses). I had a great idea for the tomatoes considering I had leftover basil and mozzarella from Sunday’s grilled pizza. On my way to get the tomatoes, I spotted these puppies in the dining room.

I mean…come on! YUM! I actually saw them on one of Gabriela‘s posts a few days ago and was salivating. What a coincidence!

Onto the Bruschetta! Being that I was on a food processor craze, I decided to just throw all the ingredients in and pulse once or twice. I combined:

  • 1 tomato
  • 1/4 cup basil
  • large chunk of mozzarella
  • 1 clove garlic
I pulsed only once and it was diced up nice and small. I added:
  • drop of olive oil
  • drop of balsamic vinegar
  • dash salt and pepper to taste

I didn’t even need bread! It was so good. I’ll probably make more tomorrow but I really was just anxious to test the new gadget. I gobbled the one person serving down in a second.

Next, I made what I had really been craving all day. Cookie dough cereal! I saw it on Fitnessista and really wanted to try it. I added:
  • 1/2 cup oats
  • 1/2 scoop vanilla protein powder
  • cinnamon
  • stevia packet
  • pinch of sea salt
  • pinch of vanilla extract
  • 1 T Hershey’s dark cocoa powder (my addition)
I mixed it up and added 1 T Crazy Richard’s peanut butter and 1 T of my homemade almond butter. I crushed it up until it was crumbly and then added almond milk, strawberries and half of a banana.
I am now sufficiently full for the night. Watching Modern Family and reading some more Carrots ‘N’ Cake will surely put me to bed. Goodnight!

Honey Hoisin Chicken

Yesterday was a quiet day at work, so my boss told us to leave a little early. Since my commute is about an hour (sometimes more), I am always happy to be home before 7:00! I wanted to cook on the grill again since it was so nice out and I had taken chicken out of the freezer the night before.

When I got home, I mixed up the following:

  • Honey
  • Hoisin sauce
  • Rice vinegar
  • Pepper
  • Olive Oil
  • Chopped garlic

I honestly didn’t measure it, I just looked at it and made sure it was enough to marinate two peices of chicken.

To my disapointment, the grill would not light! I guess the tank is empty and I will have to get on Joe to replace it. 😉 I had to bake it instead, booo!

After baking in the oven for 20 minutes on 375 degrees (flipping half way through), I placed the chicken on top of some broccoli slaw that I mixed with rice vinegar, chia seeds, pepper, and olive oil.

I saved the other piece for lunch this week. It would have tasted much much better on the time!

Dessert was a hodge podge. I placed 2 broken up vanilla pizzelles in a bowl. I cut up some strawberries and through some frozen bananas in there, too. Then I added some almond milk, a scoop of Hershey’s dark cocoa powder, stevia to sweeten, a dollop of cool whip, and sprinkles, of course! Last minute I added some gooey Crazy Richard’s natural peanut butter.

Yuuummmm! I have a feeling a smoothie bowl is in place for dinner tonight!

Grilled Pizza

Since Joe and I eat Pizza every single Sunday (our cheat day), I decided I wanted to make it this week instead of ordering out. So, last night, we enjoyed two pie’s of somewhat healthy Pizza.

First up was making the sauce. I sauteed about 2 tbsp. of garlic in 1 tbsp. olive oil for a few minutes. I then added a large can of whole peeled tomatoes in sauce. Before I added them I squished them up in my hands so the tomato was broken up. I added spices such as pepper, red pepper flakes, garlic powder, onion powder, truffle salt, oregano, and fresh basil. I also added a little bit of parmesean cheese to thicken it up. I let it simmer for a while, or until Joe got home. 🙂

As soon as Joe got home I turned on the grill and started prepping the pie’s. The first one was just basic with sauce and mutz (I used Polly-O part skim)!

I popped it on the top rack of the grill to bake for a while, and then moved it to the bottom rack so the crust got crispy. Oh, by the way I used store bought whole wheat crust! Much easier than making my own, but someday I will. 🙂

We topped it with parmesean cheese and fresh basil and DUG IN!

For the second pie, I decided to do something a little different. I sauteed some mushrooms in olive oil and added asiago cheese to the mix. Good choice, if I do say so myself.

We washed it all down with a bottle of Ken Wright Cellars Pinot Noir.

This was the first time we used the grill this year. I love grilling on beautiful days like yesterday! I can’t wait to use it more often. It’s so easy and you can grill just about anything.

Now, I’m off to eat leftover pizza with some roasted brussel sprouts I cooked up last night. Have a happy Monday!

Mother’s Day

My Mom came down Saturday morning to stay for Mother’s Day weekend. We talked, went shopping, walked around NYC, but basically, we ate. We ate a lot of good food! I had a Gilt City credit to Centro Vinoteca, so we went there for lunch on Saturday. It included 2 glasses of wine and 4 appetizers. We were presently surprised by the size of the “piccolino” menu choices. We went with meatballs, zucchini fritters, rice balls, and ricotta with toast points.

Afterwards, we bolted to the gelato place across the street! My Mom went with her usual Tiramisu and I got Nutella.

We were definitely filled enough after that. Enough to go shopping for a few hours! We both got some MAC makeup and I got a refill on my perfume.

Every time my Mom comes to the city she wants Magnolia cupcakes. They came out with mini ones, but they are special order only. We found that out last time and we were disappointed. I made sure that for Mother’s day, we got them! I placed a special order this week, so when we got to the line that is always wrapped around the corner, I told her to wait outside. I brought out a dozen mini’s for us to enjoy later in the day.

Loooove me some Magnolia! 🙂

We enjoyed them with some tea when we got home. After having pizza for dinner, of course!

Today, we got up and got ready to go to brunch at Joe’s restaurant. Since the new menu came out, my mom wanted to try it. We both went with a mimosa and green tea to start.

Followed by the muffins they always bring out pre-appetizer/entree…

Which we slathered this yummy stuff on…

My mom went with the tuna nicoise salad for her appetizer, and I chose the blueberry greek yogurt with granola.

For our brunch entrees, my mom got the smoked salmon with creme fraiche on a bagel (soooo good!) and I got the asparagus and lump crab quiche (much much better than I expected!)

Our waitress Lindsay then sent out a cake with strawberries, which we ate too fast so no picture was taken! Joe covered our brunch (he was working today) which was really nice. He always covers when my Mom and I come to eat there. We go because the food is always so good and I feel bad that he always pays. Especially when I am trying to take my Mom out for Mother’s Day here! 😉 Well, she enjoyed the cupcakes and makeup I bought her anyway!

We then spent some quality Mom and daughter shopping time at TJMaxx….and the grocery store! haha!

I left with some mason jars, an apron, and some new workout tanks. Which, by the way, I cannot wait to get back to the gym tomorrow ! One week was a long time with no exercise for me! It’s going to feel really good to go back after having this break. Overall, I think it was a good thing to make sure I am back to my healthy state! No more antibiotics after today.

I hope everyone had a great Mother’s Day. Now, I am off to cook some dinner for when Joe gets home. Grilled Pizza? Hmm..You’ll see tomorrow!
