Another Work Week

I can’t help but be depressed every Sunday night and Monday morning. It’s the same feeling every week. After Monday is over, I am back in the groove, the week flys by, and the weekend, and it starts all over again. It’s a viscious cycle. That’s why I need things to look forward to. Thankfully, this summer I have a lot! I have two weddings (one of which I am a bridesmaid in), a bachelorette party in St. John’s, DMB Caravan in August, and hopefully the Healthy Living Summit if I can get tickets. They go on sale tonight at 8pm. Who else is going? šŸ™‚

Yesterday I attended a Bridal shower of the second wedding I have this summer. It is one of Joe’s best friends, so he is in the bridal party for that wedding. It was a really beautiful shower and the cake was absolutely amazing!

The guys all went to see Hangover 2 while we were at the shower, so I just met Joe at home afterwards. We did our usual Sunday routine: ordered pizza and hung out on the couch watching TV. I made him watch Eat Pray Love. I’ve seen it but I just love looking at the food and the scenery in it. I know he wasn’t super excited about watching it initially, but I could tell he secretly liked it! Some red wine was also enjoyed.

Monday mornings are always hard after a day filled with glutonous eating. Joe had to go into work early this morning so he woke his butt up with me at 5:20 and we hit the gym. We both completed abs and 45 minutes on the treadmill (running and incline walking intervals). I made a quick smoothie to go since somehow I am always late when we are trying to get ready at the same time. But, he also drove me to the train this morning which was nice!


IĀ marinatedĀ chicken inĀ olive oil, balsamic vinegar, truffle salt, pepper, garlic, and lemon overnight Saturday and grilled it up yesterday after the shower. I portioned it out with some brussel sprouts and bulgur wheat that I cooked up to make lunch for more than 1 day this week. Woo hoo!


I am already over Monday. I have to take my bridesmaids dress to get fitted after work, and then hang out at the restaurant (and have some dinner) while I wait for Joe to get out of work.

Broccoli and Shrimp Bulgur Wheat

I will leave you with a recipe before I take off to the beach until Monday night. It’s clearly my lunch all next week hence the tupperware. I knew I would be gone this weekend and have a super busy work week, so I wanted to get my lunch out of the way. I cooked this up and separated in tupperware so it’s ready to go!

Broccoli and Shrimp Bulgur Wheat

  • 1 large bag of fresh broccoli, chopped in medium size pieces
  • 1 lb. small shrimp (I used frozen already cooked, but any will work)
  • 2 lemons
  • 1 cup bulgur wheat (I use Bob’s Red Mill)
  • 2 cups water
  • 1 tsp. salt (I use truffle salt because I love it)
  • 2 tbsp. pepper
  • 1/4 cup dried parsley (fresh chopped would probably be better!)
  • 1/4 cup parmesan cheese
  • 2 tbsp olive oil
Add bulgur wheat and water to a large pot and let it come to a boil. Cover and simmer about 15 minutes or until cooked. Add in olive oil as needed, parmesan, salt, pepper, parsley and parmesan cheese. You can add less or more, it is really to taste. Cut the lemons in half and squeeze the juice into the mixture. If it seems dry, more lemons or olive oil will do the trick. After mixing it all up, add the shrimp and broccoli and stir.Ā 

Super easy, healthy, protein/veggie/fiber packed lunch! I did take a few bites before storing it away.

Aside from cooking this, today I managed to go to the gym and complete an upper body workout, go to the grocery store, do laundry, and pack. I’m off to Joe’s parents beach house in NJ! I hope you all have a safe and fun Memorial Day weekend!

Running: The Mind Game

I have been running in some way or form for years. I played every sport in the book since gradeschool. This includes basketball, soccer, field hockey, track and field, cross country, softball, even tee-ball! I was on the Yankees tee-ball team with all boys in little league. In any event, although I stopped playing sports when I went to college, I continued to stay active (for the most part) and running stuck with me. It’s an unexplainable high that you cannot reproduce. When I had my two hip surgeries, it killed me to not be able to run. It was the bike and the ellyptical only. It’s not that I dont use these regularly, but when I am told that I can’t run it’s a little different.

The reason that this topic came to mind is because of what I did this morning.

I have fallen off the “long run” streak that I had going for the last year. About 2 months ago my right hip started acting up and I went to see my surgeon. He said I did not need any procedures done, but there was some inflammation and I should goto physical therapy and take it easy on running. This is when I began intervals. I started doing a lot of incline walking mixed with quick sprints. I love intervals but I missed the feeling I got after a true long run. For me, 7 miles is a lot because of my hips, but I still someday hope to build up to do atleast a half marathon.

Today I woke up not really feeling the gym, but I snapped out of it and told myself to just get up and do what I can! After a quick ab routine I hopped on the treadmill thinking I was just going to do some intervals for 45 minutes and call it a day. After alternating 2 minutes of sprinting (8.0) with 3 minutes of jogging (6.5), I kept going and increased from 7.0 to 8.5, etc. I remembered how much of a mind game running is. You keep telling yourself that you are going to stop but when you hit that marked time that you set for yourself, something tells you to keep going. I equate it to lifting when you feel like you just can’t do anymore because it hurts but you just push yourself because you know how it feels afterwards. I got to 50 minutes and I was at about 6 miles and decided to just bust out the last mile and get back to where I was a few months ago. I sprinted at 8.0 and 8.5 before doing my cooldown. It felt so good to leave the gym completing 7.15 miles! It always happens like that – on days when I think I just can’t do it. On days that I try to plan it, I find that I never end up completing as much.

The next part of my day was exciting to me but probably not to you. I left the foot doctor feeling like a new person. Speaking of running, it has seriously killed my pretty feet. I had new orthotics made, had calluses removed, and got a topical treatment for my crazy running toenails. Yeah, all the gross stuff you don’t want to hear about. Yet, I continue to run. Only some will understand.

It is disgustingly humid today, which is why I was a wet dog after running, and why my hair is in a wet bun for work. No point attempting any sort of hairstyle today in NYC.


I have always seen Dr. Praeger’s veggie burgers and wanted to try them. After seeing pictures from Fit-Bloggin on everyone’s recap’s, I decided to pick up the california style veggie burgers for this week’s lunch. I put it on the usual whole wheat sandwich thin with muenster cheese and paired it with veggies and hummus. The burger was packed with veggies and super yummy. You can see the edamame chunks when you bite into it. Very pleased – this is my new goto veggie burger!

Bridal Shower Recap

I have been M.I.A. all weekend, clearly, so I figured I’d recap my friend’s bridal shower. I was gone Friday night through Sunday and unfortunately still haven’t caught up on my sleep due to my boss asking me to come in an hour early to work this morning.

The shower turned out beautiful and we were happy that Carrie enjoyed all of the work we put into it. We each brought a dish and ended up with a great menu consisting of chicken salad with grapes & pecans, asparagus and green beans with lemon basil dip, salad with blackberries, ham biscuits, fruit salad,Ā caprese skewers, and a whole slew of appetizers that I unfortunately forgot to snap a picture of. We had cheese, veggies, crackers, hummus, shrimp cocktail, etc.

Drinks included wine and the lemon basil mojito that I made. I think the picture below is mainly pellegrino being that we all had a few drinks before lunch and switched to water for a bit!

The bride opened her gifts from Pottery Barn & Williams -Sonoma. We also got her a gift from the bridesmaids that included a wine tour on their honeymoon which is an African safari! So cool, right? The theme of the shower was safari chic, so we all wore printed dresses. We also did a “wishing well” where guests brought a bar item to complete the bar in their apartment.

I wish I got a picture of the full spread, there were so many gifts! Her soon to be mother-in-law is a photographer so when she posts all of her photos I will have to give an update! We also made Carrie a bow hat and got her a sash, which she clearly loved.

We then enjoyed a great spread of desserts including chocolate covered strawberries, lemon tarts, and cake. The cake was an orange flavor and I thought I wasn’t going to like it. I am not one for creamsicle and I normally enjoy chocolate cake, but this was to die for!

We then headed to the backyard to have some fun on the zipliner!

All guests left with a favor – little bags of chocolate covered pretzels with a cute note.

After the shower, we cleaned up, took a nap, and had leftover food and drinks before heading out. We ended up going to a deck bar with a fun band. We obviously made sure that the bride was pulled up on stage!

We got home after 1 AM and polished off the rest of the cake and leftovers.


We woke up early and hit the road after a quick breakfast that included fresh fruit, coffee,Ā and cinnamon toast crunch bagels from Panera Bread (yum!). It was about 2 hours away, so by the time I got home I was starving and met Joe for our usual Sunday pizza. I had a great weekend overall, but just didn’t get enough sleep! Oh well, you’ll have that sometimes! šŸ™‚ I woke up at 4:30 this morning to get in a quick run before having to come into work super early, as mentioned above. Speaking of, I have to get back to that!

Last night, I was up late talking with Joe aboutĀ  our relationship. We needed to talk some things out that have been going on lately and we have come to the conclusion that communication is so important and we both need to be aware of things and not become complacent. Our work schedules are somewhat conflicting, so we need to enjoy every minute we have together and cease the moment.

I feel so much better that we talked! However, when my alarm went off this morningĀ I was so tired I wanted to cry. I decided to sleep in a little and skip my ab routine. I pushed myself to get up and atleast do some cardio and I ended up busting out 5 miles in 45 minutes. Yay for me. I made a protein shake with my new arrivals from Netrition, which I’ll be covering reviews on soon I am sure.

On another complacency note, my teammate got promoted and is leaving to go to her new area in 2 weeks. We are all happy for her but sad she is leaving us. She has been in the position for two years and I think it is great that the company I work for likes to promote within and move people around frequently to stop people from becoming complacent in their position. I am a bit nervous about where her workload will go before we find someone to fill the spot, though. We shall see.


Today’s lunch was a bit random, but very good! Last night I cut up a green squash and covered it with olive oil, salt, pepper, and garlic powder. I roasted it for 20 minutes on 350 degrees.

I love my veggies, but the main course of lunch was much more exciting. I had one more Morningstar veggie burger left so I decided to bring that with a Pepperidge Farm whole wheat sandwich thin, the rest of an avocado from my tacosĀ that I had the last 3 days, and goat cheese that I totally forgot I had. Pepperidge Farm thins are so much better than Arnold’s! They are thicker and don’t cause as many crumbs. Anyone else agree?? In any event, this was a very interesting and yummy combo!

After work I have to stop and get a few things for my best friend’s wedding shower this weekend. I am in her wedding in July and we are throwing her a shower this weekend at her sister’s house, which isĀ 2 1/2Ā hours away. I have to prep some mixed drinks and food and figure out a way to store and and travel with all of it Saturday morning! This should be interesting. šŸ™‚

Strawberry Shortcake Smoothie

I was on a mission after work to find buttons for my trench coat. I have had the coat for years and I love it but all of the buttons are loose or have already fallen off. I decided to goto M&J Trimmings in midtown and pick out some new tortoise shell buttons to go with my trench. I dropped it off at the tailors on my way home and cannot wait to pick it back up on Friday! It is going to be a rainy week here so it stinks that I won’t have it.

Anyway, I was craving a smoothie for dinner tonight since I had a big lunch. I got the idea to make a strawberry shortcake smoothie.

I blended it up and topped it with a dollop of cool whip, a sliced strawberry, chia seeds, and flax meal. Of course I added a leftover chocolate covered strawberry from this weekend, just because!

The wheat germ and cinnamon gave it a dough-ey taste, but next time I think I’ll try it with oats. I needed some nut butter in my life so I also had some spoonfuls of this:

I stopped at Target after work on Friday and while I was browsing the food aisles I came across their Archer Farms brand almond butter for only $3.99! That’s so cheap for almond butter and it’s all natural. The only ingredient is roasted almonds.


I have a foot doctor appointment before work to get my orthotics refurbished. I’m pretty sure they’re on their last limb.

I don’t even think I can count the amount of miles I ran on these things in the past year considering I run almost 20 a week. I have just been to lazy to take them– and it’s free too! I hope it doesn’t take too long so I don’t have to run without them that long. I have them because of the way my feet hit the ground near my toes (like the ball of my foot sort of). The tendons get inflamed and I had to have cortisone shots a few times before getting these orthotics. They are lifesavers!

I have a phone date with one of my best friend’s Claire now. She moved out to California (hense the late date –9:30pm) two years ago and I miss her so much! We graduated from the Fashion Institute of Technology together (see below). She is coming to visit in two weeks so I’m sure you’ll be reading about it on here.

Taco Monday

…because I couldn’t wait until Taco Tuesday. Although, I am sure I’ll be having the same lunch tomorrow.

Yesterday I prepped taco meat by sauteeing onions and peppers in olive oil and adding in 99% fat free turkey meat until browned. I added in a low sodium taco seasoning packet and let it simmer. I now have 3 days worth of lunch for the week. I love taco lunches, it’s so easy! I added some black beans to the mix after I portioned them out in tupperware.

I cut up onions and tomato and added lime juice, cilantro, and salt to make a quick pico de gallo. I brought half of an avocado too.

Lastly, I cut a whole wheat wrap into “chips” and baked until crispy.

Easy, healthy, and yummy!
